Harpies sometimes can't be skinned

In Magwytch Marshes I'm trying to hunt harpies and sometimes after killing them (or finding them dead) they can't be skinned. They die in a strange death pose where their head is tucked underneat their body and when looking thru the spyglass it shows their name as if they were alive? need their meat to make a new bow so it's kind of annoying
