I have a workaround for this issue so that you can continue to progress in the game while we are looking into this issue.
If you reset your Forest Gauntlet realm, you should be able to re-kill the Elder Eoten and collect its heart to complete the quest. You can reset your Forest Gauntlet realm by interacting with the portal in your crossways, closing the original realm portal, then opening it again with the "reset realm" box checked.
