Creating single-tile-wide corridors with peaked roofs gets unnecessarily complicated by the lack of 3-way and 4-way roof tiles. Corners are good, but they don't work for intersections, and the standard-size roof tiles also don't work out.
A solution with existing tiles is to build a "box" for a square roof, but that is not always acceptable to the designs people are going for, especially since half-height walls don't exist to keep the flat roof at the same level as the peaked roofs.
Two other peaked-roof variants worth adding would be conical and pyramidical for single-room ceilings. Conical peaked roofs are not yet viable because there are no curved walls to fit them neatly to (corners would protrude), but pyramidical peaked roofs would definitely fit properly and make more interesting designs possible.
Combining half-height walls with a pyramidical peaked roof would provide another alternative to the problem of intersections with peaked roofs, but ideally all of the options would be added:
3-way peaked roof intersection
4-way peaked roof intersection
Conical peaked roof
Pyramidical peaked roof
Half-height walls
(Edited in later) Half-archway, like Obsidian "Inverted Half Gable End"
Half-arch pieces would allow for entrance areas that take up more than a single tile space without breaking up the entrance into two separate arches. I regularly come across situations where a two-tile-wide arch would be better than a single-tile archway.

We definitely need more build pieces, I am desperate for the Half Gable End to have an inverted version (so upside down)!
I can fouch for this need.
Some additional things that would be great to add would be Quarter tiles (basically get a normal wall/floor tile and divide it in 4).
I really would recommend you explore the riles available in Valheim to see the shapes. It should cover all the needs. It's not about copying, it's about seeing what works and getting inspiration. Nothing wrong with it.
That said, the roof tiles should really match the quarters that I just mentioned. It's file if there are "bigger" more complex roof parts that need to be a single bigger piece. But the standard roof bits should really be smaller.
