When selecting resources for residents to gather, if there are multiple workstations of the same type, the selection can sometimes/often clear itself (after selecting it briefly selects the resource and then goes back to "Select Resource"). It can also clear other stations of their selected resource, typically the ones higher up in the "ongoing jobs" list.
Edit: Closing and re-opening the estate cairn fixes the problem. The UI was being cleared, but the jobs were still ongoing.

Adding to this, I believe the source of the issue is having more than 1 Cairn active at any point. During my play session, I had my T1 Cairn active, then fully built a T2 Cairn befor deleting the T1. This processe repeated all the way up until T4. Was given this link and the issue was not merely visual, and reopening the estate cairn did not fix the problem for me. However deleting all Cairns and replacing the final T4 did finally fix the issue. I suspect the NPCs are getting confused and thinking that they are working a resource site (Mine A) under a different Cairn that was previously deleted and the assignment is not getting cleared. Therefore when you select a worker to mine the same resource it believes the same station is already in use (Mine A) and clears the other NPCs from it.
Point to add - It'd be lovely to see in the list how many of the stations are available maybe a 4/5 (with 5/5 being full) so we don't accidentally choose a station that's full thinking there's more workers available.
This is how I personally run into this issue. Never really thought of it as a bug, just bad management remembering on my part.
Example:
Let's say I have 5 mining stations.
But I can't remember how many I have (because they're away from where my Cairn is), so I click to add someone to a 6th that doesn't exist.
It removes all settings from the first chosen NPC since I don't have that spot available, and now it's wiped.
I can put the first NPC on another spot, or a new bench, assuming I remember which ones I have free slots in.
